The Institute of Hotel Management, Catering Technology and Applied Nutrition, Mumbai, the first of its kind in South East Asia was founded in the year 1954 by the All India Women’s Central Food Council under the leadership of Late Smt. Lilavati Munshi.
Late Smt. Lilavati Munshi with a band of courageous women which included Smt. Homi J H Taleyarkhan and Smt. Leela N Jog under the name of All India Women’s Central Food Council established a chain of Annapoornas (restaurants) throughout the country, but primarily in the metropolitan cities to prepare and sell economic but nutritionally sound snacks and foods.
The purpose was to improve the nutritional status of the average from a high cereal diet to a more balanced diet. The critical factor, however, was to find trained personnel to run these Annapoornas on a self-financing basis. Hence the birth of the training Institute - IHM Mumbai.
Hotel Management and Catering Technology was still a young discipline in those days even in the West, in fact, the school of Hotel Administration of Cornell University bifurcated from the Department of Home Economics as a separate faculty only in 1954.

This Institute was started in 1972 as a registered Society under the Andhra Pradesh (Telangana Area) Public Societies Act, 1350 Fasli (Act I of 1350F) in the name and style “Food Craft Institute (Hyderabad) Society”, Hyderabad. The government of India, Department of Tourism, New Delhi have upgraded this Institute in 1984 by introducing a 3 Year Diploma in Hotel Management and Catering Technology. Consequent on up-gradation, the name of the Institute has been changed from “Food Craft Institute” to “Institute of Hotel Management Catering Technology and Applied Nutrition”.
This Institute is functioning under the academic control of National Council for Hotel Management and Catering Technology, Noida, an Apex Body set up by the Department of Tourism, Government of India. Prior to the up-gradation, only Craft Certificate Courses of Six months / One Year duration were conducted in the trades – Cookery, Bakery and Confectionery, Canning and Food Preservation, Restaurant and Counter Service, Hotel Reception and Book-keeping and House-Keeping including a Postgraduate Diploma Course in Tourism and Travel.

Shri Banarsidas Chandiwala Sewa Smarak Trust Society was established in 1952 by Shri Brijkrishan Chandiwala in the memory of his father Late Shri Banarsidas Chandiwala.

Shri Brij Krishan Chandiwala, the founding member of the Trust Society, was its first Secretary and he presided over the daily affairs. The position of Secretary is an all-consuming responsibility. The Institute of Hotel Management Catering Technology and Applied Nutrition, Chennai was established in 1963 jointly sponsored by the Government of Tamil Nadu and the Govt. of India at national level as one of the Pioneer Institutes in India for imparting quality training in Three Year Degree B.Sc in H&HA, Two Year Post Graduation M.Sc in HA and also 1 ½ Years Diploma and Craft Courses. The Govt. of Tamil Nadu was closely associated with the institute since its very inception. The entire Recurring and Capital expenditure is funded by the Ministry of Tourism, Govt. of India from 1.4.79. The Institute has recorded rapid growth, expansion, and popularity in the past 50 years with senior management level employment for the students. At present Capital Grant only is funded by the Ministry of Tourism, Govt. of India and from 1998-1999 Recurring Expenditure is self-financed by the Institute.
